Fish4ever Anchovies in Extra Virgin Olive Oil are intensely savoury, traditionally matured anchovy fillets created for seasoning sauces, dressings, pasta dishes and Mediterranean recipes. This twelve-jar case provides a substantial supply for regular cooks, hospitality-style use or customers who frequently use anchovies as a store-cupboard ingredient.The anchovies are fished by local boats in the Southern Mediterranean, south of Sicily and Calabria. After landing, they are processed by hand in a small local factory and layered in vats with hand-harvested Trapani sea salt. The fish are allowed to mature for between six and eight months before the fillets are cleaned, prepared individually and packed into jars.Each jar contains 55% salted anchovy fillets and 45% cold-pressed extra virgin olive oil from organic agriculture.
